Lemon-Caper Mayonnaise

1 ½ cups mayonnaise
6 tablespoons capers — rinsed and drained
1 tablespoon lemon zest
3 tablespoons lemon juice — fresh
1 tablespoon Dijon mustard
salt and pepper — to taste
In a small mixing bowl. Stir together all of the ingredients. Season with salt and pepper to taste. Refrigerate in an airtight container until use.
