Ingredients
1whole chickenabout 4-5 pounds
1lemoncut into wedges
3clovesgarlicminced
3tablespoonsolive oil
1tablespoonchopped fresh thyme
1tablespoonchopped fresh rosemary
1tablespoonchopped fresh oregano
Salt and pepperto taste
Instructions
Preheat the oven to 375°F (190°C).
Rinse the chicken inside and out with cold water, then pat it dry with paper towels.
In a small bowl, combine the minced garlic, olive oil, chopped herbs, salt, and pepper.
Rub the herb mixture all over the chicken, inside and out.
Stuff the chicken cavity with the lemon wedges.
Place the chicken in a roasting pan or baking dish, breast side up.
Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.
Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
Garnish with additional fresh herbs and lemon wedges, if desired.
