Ingredients
6each egg yolks
2tablespoonwater
16ouncesclarified butter -- hot
1tablespoonlemon juice fresh
dash tobasco sauce
¼teaspoonWorcestershire sauce
½teaspoonsalt
¼teaspoonwhite pepper
Instructions
In a small stainless steel mixing bowl, combine the egg yolks and 1 tablespoon of water. Whisk the mixture until well blended.
Place the bowl over a pot of boiling water on the stovetop, ensuring that the bottom of the bowl does not touch the water. Continuously whisk the mixture until it reaches a soft peak consistency, which usually takes about 3 minutes. Be careful not to overcook the eggs.
Remove the bowl from the heat and place it on a wet towel to prevent slipping.
Slowly pour the hot clarified butter into the egg mixture, adding about 1 ounce at a time while continuously whisking. Once half of the butter has been incorporated, add the remaining water and continue adding the butter until fully combined.
Stir in the fresh lemon juice, Tabasco sauce, Worcestershire sauce, salt, and white pepper. Adjust the seasonings to taste.
