Ingredients
1cupcorn
2tablespoonsolive oil
1/4cupsugar
1/4cupwhite wine vinegar
Chopped cilantro
1limezest and juice
1teaspoonkosher salt
1teaspooncumin
1teaspoonchili powder
1teaspoonoregano
1/2teaspoonblack pepper
15ozcan blackeye peasdrained and rinsed
15ozcan black beansdrained and rinsed
2clovesgarlicminced
1orange bell pepperdiced
3Roma tomatoesdiced
1jalapeno pepperseeded and minced
Instructions
In a large mixing bowl, combine corn, olive oil, sugar, white wine vinegar, chopped cilantro, lime zest and juice, kosher salt, cumin, chili powder, oregano, and black pepper. Mix well.
Add blackeye peas, black beans, minced garlic, diced orange bell pepper, diced Roma tomatoes, and minced jalapeno pepper to the bowl. Gently mix to combine all ingredients.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
Before serving, give the cowboy caviar a quick stir to redistribute the dressing and seasonings. Adjust the seasoning to taste.
