Ingredients
1 ½cupsuncooked penne pasta
½poundItalian sausage
1medium onionchopped
1teaspoondried oregano leaves
½teaspoonCajun seasoning
1cupchicken stock
15ouncescanned chili beans in zesty sauce
14 ½ouncescanned diced tomatoes in chili-style
Instructions
Preheat the oven to 350°F (175°C).
Cook the penne pasta according to package instructions. Drain and set aside.
In a large sauté pan, cook the Italian sausage and chopped onion over medium heat for about 10 minutes, stirring occasionally, until the sausage is no longer pink.
Remove the pan from heat and stir in the dried oregano leaves and Cajun seasoning.
Add the cooked pasta, chicken stock, chili beans in zesty sauce, and diced tomatoes in chili-style to the pan. Mix thoroughly.
Spoon the mixture into a 2-quart casserole dish.
Cover the casserole dish and bake for 45 minutes or until the center is hot and bubbly.
Remove from the oven and let it cool slightly before serving.
