Ingredients
2cupsof cooked white rice
1cupof mixed vegetablescarrots, peas, corn, broccoli, bell peppers, etc., diced
1/2oniondiced
2garlic clovesminced
2tbspof vegetable oil
2tbspof soy sauce
1tspof sesame oil
2eggsbeaten
Salt and pepper to taste
Green onionssliced for garnish
Instructions
Heat a large skillet or wok over medium-high heat. Add 1 tbsp of vegetable oil and swirl to coat the pan.
Add the beaten eggs and scramble them until cooked. Remove from the pan and set aside.
Add the remaining tablespoon of vegetable oil to the pan, then add the onions and garlic. Cook for 1-2 minutes until the onions are translucent.
Add the mixed vegetables to the pan and stir-fry for 2-3 minutes until slightly tender.
Add the cooked rice to the pan and stir-fry for another 2-3 minutes, breaking up any clumps of rice.
Add the soy sauce and sesame oil to the pan and stir to combine. Taste the fried rice and add salt and pepper to your liking.
Add the scrambled eggs back to the pan and stir to combine with the rice and vegetables.
Cook for another 2-3 minutes until everything is heated through.
Serve hot, garnished with sliced green onions. Enjoy!

- Feel free to use your preferred combination of vegetables in this recipe.- For an extra protein boost, add diced tofu or sliced chicken.
