Ingredients
2poundsof boiled potatoessliced after they cool down
2hard-boiled eggscooled down and chopped
2tablespoonsfinely chopped shallot onions
3-5finely chopped celery stalks
1finely chopped cucumber
2tablespoonsvinegar
½cupheavy cream38%
2-3teaspoonssalt
½teaspoonfreshly ground black pepper
3teaspoonsFrench mustard
2-3tablespoonsvinegar
½cupgrams mayonnaise
1teaspoonlemon juice
For topping:
1hard-boiled egg
1tomato
Chopped parsley
Instructions
Cut the cooled potatoes into small squares and place them in a large bowl.
Add the chopped shallot onions, eggs, celery, and cucumber to the bowl.
In a separate bowl, mix the vinegar, cream, salt, and pepper, then pour it into the potato bowl.
Wait 10 minutes and then add the mayonnaise.
Place the salad in a cool place for about 1 hour.
Add the lemon juice and more salt and pepper if needed. If the salad seems dry, add more cream.
Before serving, top the salad with chopped hard-boiled egg, tomato, and parsley.
