Ingredients
2medium cucumbersdiced
4ripe tomatoesdiced
1small red onionfinely chopped
1green bell pepperdiced
1/2cupfresh parsleychopped
1/4cupfresh mint leaveschopped
Juice of 2 lemons
1/4cupextra virgin olive oil
Salt and black pepper to taste
Optional: 1/2 cup crumbled feta cheese
Instructions
In a large bowl, combine the diced cucumbers, tomatoes, red onion, and green bell pepper.
Add the chopped parsley and mint leaves to the bowl.
In a separate small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
Pour the dressing over the salad ingredients and toss gently to combine.
