Ingredients
1bunch of fresh spinach leaves
2tablespoonsolive oil
2clovesgarlicminced
1/4cupcrumbled feta cheese
Zest and juice of 1 lemon
Salt and pepper to taste
Instructions
Rinse and pat dry the fresh spinach leaves, removing any tough stems.
Heat olive oil in a large skillet over medium heat.
Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
Add the spinach leaves to the skillet and sauté for 2-3 minutes until they start to wilt.
Sprinkle crumbled feta cheese over the spinach and continue to sauté for another minute until the cheese begins to melt.
Remove the skillet from the heat and squeeze the juice of the lemon over the spinach. Add the lemon zest.
Season with salt and pepper to taste and toss to combine.
Transfer the sautéed spinach with feta and lemon to a serving dish.
Serve hot as a flavorful and nutritious side dish.
