Ingredients
2cans condensed milksweetened — 14 ounce
8ounceslime juice — * see note
½cupsugar
6each egg yolks
1each egg white
1each graham cracker pie crust9 inch
1pintheavy whipping cream
2tablespoonspowdered sugar
1each lime — grated
Instructions
Preheat the oven to 350°F (175°C).
In a medium mixing bowl, combine the sweetened condensed milk, lime juice, sugar, and egg yolks. Mix well.
Lightly brush the egg white all over the inside of the pie shell using a pastry brush.
Bake the pie shell for 5 minutes.
Once the pie shell is baked, pour the lime mixture into the pie shell.
Place the pie in the oven and bake for 30 minutes or until the middle is set and a toothpick comes out clean.
Allow the pie to cool before serving.
Meanwhile, in a mixing bowl, combine the heavy whipping cream and powdered sugar. Mix on medium-high speed until firm peaks form.
Evenly spread the whipped cream over the top of the pie.
Grate lime zest on top of the whipped cream for added flavor.
