4cupscranberries — fresh
1cupwater
½cuporange juice — freshly squeezed
1cupsugar
1tablespoonginger — finely grated
1tablespoonshallot — finely chopped
1tablespoonlight molasses
salt — to taste
Instructions
In a large, heavy saucepan, combine the cranberries, 1 cup of water, ½ cup of freshly squeezed orange juice, sugar, ginger, and chopped shallots. Stir the mixture over medium heat until the sugar dissolves.
Increase the heat to medium-high and continue cooking until the cranberries begin to burst, which usually takes about ten minutes. Stir in the light molasses and season with salt.
