Ingredients
4each jalapeno chile pepper — dried
2tablespoonscoriander seed
2teaspoonscumin seeds
1teaspooncardamom seeds
¼teaspoonwhole clove
4tablespoonspaprika
1teaspoonground ginger
1teaspoonallspice
1teaspooncinnamon
½teaspoonturmeric
Instructions
Remove the stems from the dried jalapeno peppers and discard them. Coarsely chop the peppers and set them aside.
In a small frying pan over low heat, combine the coriander seeds, cumin seeds, cardamom seeds, cloves, and peppercorns. Toast them lightly, stirring, for about 5 minutes. Be careful not to burn or scorch them. Remove the pan from the heat and let it cool.
In a clean coffee grinder, combine the chopped jalapeno peppers, toasted seeds and spices, paprika, ground ginger, allspice, cinnamon, and turmeric. Grind the mixture until it becomes finely pulverized.
If you're not using the spice rub immediately, store it in an airtight jar to maintain its freshness.
