Ingredients
For the Salad:
6cupsmixed salad greens lettucespinach, arugula, etc.
1cupfresh strawberries sliced
1cupfresh oranges segmented
1/2cupfresh blueberries
1/2cupchopped pineapple
1/4cupchopped almonds or walnuts
1/4cupcrumbled feta cheese optional
2boiled eggs sliced
For the Poppyseed Dressing:
1/4cupolive oil
2tablespoonsapple cider vinegar
1tablespoonhoney or maple syrup
1tablespoonDijon mustard
1tablespoonpoppy seeds
Salt and pepper to taste
Instructions
Prepare the Salad:
Wash and thoroughly dry the mixed salad greens. Place them in a large salad bowl.
Add the sliced strawberries, segmented oranges, blueberries, chopped pineapple, and chopped nuts to the bowl.
If using, sprinkle the crumbled feta cheese over the top.
Arrange the sliced boiled eggs on the sides or over the top of the salad.
Make the Dressing:
In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, poppy seeds, salt, and pepper. Mix until well combined.
Assemble the Salad:
Drizzle the poppyseed dressing over the salad just before serving. You can either drizzle the dressing over the entire salad or let individuals dress their own servings.
Serve:
Gently toss the salad to distribute the dressing and ingredients evenly.
