Ingredients
1cupmedium-grain white ricerinsed and briefly soaked
2tablespoonscooking oilvegetable or olive oil
1jalapeño pepperfinely chopped (adjust to your desired level of spiciness)
1small onionfinely chopped
2clovesgarlicminced
1can14 ounces diced tomatoes
1/2cuptomato saucefor added color
1 3/4cupschicken broth or vegetable stock
1packet of Sazón seasoning
1/2cupmixed vegetablescarrots, corn, peas
Salt and pepper to taste
Fresh cilantro leaves for garnishoptional
Instructions
Heat 2 tablespoons of cooking oil in a heavy saucepan over medium heat. Add the finely chopped jalapeño and cook for about 1 minute until it becomes fragrant.
Stir in the finely chopped onion and sauté for another 2-3 minutes until translucent.
Add the rinsed and briefly soaked white rice to the pan. Toast the rice for 3-4 minutes until it turns golden and translucent.
Stir in the minced garlic and continue cooking for another 30 seconds.
Add the can of diced tomatoes, tomato sauce, Sazón seasoning, and mixed vegetables to the rice mixture. Mix everything together.
Pour in the chicken broth or vegetable stock. Stir well to combine all the ingredients.
Bring the mixture to a simmer, then reduce the heat to low. Cover the saucepan and let it simmer for 15-20 minutes, or until the rice has absorbed all the liquid and becomes soft.
Check for seasoning and adjust with salt and pepper as needed.
