Ingredients
1poundground beef
1onionchopped
2clovesgarlicminced
1jalapeno pepperfinely chopped
2tablespoonstomato paste
2tablespoonschili powder
1teaspooncumin powder
1teaspoonground coriander
1/2teaspoonsalt
1/4teaspoonblack pepper
1/4teaspooncayenne pepperoptional
2bay leaves
215-ounce cans diced tomatoes
115-ounce can tomato sauce
215-ounce cans kidney beans, drained and rinsed
1/2cupbeef stock
Instructions
In a large pot, brown the ground beef over medium heat. Drain off any excess grease.
Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
Stir in the chili powder, cumin, salt, black pepper, and cayenne pepper (if using). Cook for an additional 1 minute.
Add the tomato paste, diced tomatoes, tomato sauce, kidney beans, and beef stock to the pot. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, or until the chili has thickened.
Serve hot with your choice of toppings, such as shredded cheddar cheese, sour cream, chopped red onions, and sliced jalapeno.
Notes
For a richer flavor, substitute beef broth for water in the chili.
If you prefer a spicier chili, increase the cayenne pepper or add a chopped jalapeƱo pepper to the pot.
To thicken the chili, mash some of the kidney beans against the side of the pot with a fork.
