4tablespoonssoy sauce
4tablespoonslime juice — from about 3 limes
2tablespoonscanola oil
4clovesgarlic — minced
¾teaspoonground ginger
1poundskinless chicken breast
½cuppeanut buttercreamy
½cupcanned low sodium chicken broth
½teaspoonsugar
½teaspoonsalt
¼teaspoondried red pepper flakes
¾poundspaghetti
1bunchscallions — chopped
⅓cuppeanuts — chopped
Instructions
In a medium, shallow bowl, combine 3 tablespoons soy sauce, 2 tablespoons lime juice, 1 tablespoon of canola oil, minced garlic, and ground ginger. Add the chicken and coat it with the marinade. Set aside to marinate for at least 10 minutes. For longer marination, cover and refrigerate for up to 12 hours. Preheat a grill pan over moderate heat. Cook the chicken for 4 to 5 minutes per side until browned and cooked through. Remove the chicken from the pan and let it rest for 5 minutes. Slice the chicken crosswise into 1/4-inch slices.
Meanwhile, in a medium saucepan, combine the remaining 1 tablespoon of soy sauce and 2 tablespoons of lime juice, creamy peanut butter, low-sodium chicken broth, sugar, salt, and dried red pepper flakes. Pour the marinade from the chicken into the saucepan and bring it to a simmer over moderate heat, whisking until smooth. In a large pot of boiling salted water, cook the spaghetti until al dente, about 12 minutes. Drain the pasta and toss it with the peanut sauce, grilled chicken slices, and chopped scallions. Top with chopped peanuts. Serve the Thai Chicken with Peanut Sauce family-style and enjoy!
