Ingredients
1tablespoonbutter
1medium onion — chopped
1cuprice
2cupschicken stock
10ouncesfrozen spinach
Instructions
In a medium saucepan, melt the butter over medium heat. Add the chopped onions and sauté until tender.
Stir in the rice, ensuring it is coated with the melted butter and onions.
Pour in the chicken stock and bring it to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 10 minutes.
Add the frozen spinach to the saucepan, return to a boil, cover again, and simmer until the spinach is just tender, which should take about 15 minutes.
Remove the saucepan from the heat and let it stand for 5 minutes before serving.
