Ingredients
3each egg yolks
1tablespoonDijon mustard
4teaspoonsgarlic powder
1 ¼teaspoonsanchovy paste
1 ½cupsvegetable oil
6tablespoonsred wine vinegar
2tablespoonslemon juice
16each anchovies — fillets
1cupParmesan cheese
2teaspoonswhite pepper
4heads romaine lettuce — sliced 1 1/2″
Instructions
In a mixer, blend the egg yolks at medium speed for 5 minutes until smooth.
Add the Dijon mustard, garlic powder, and anchovy paste to the mixer. Mix until well blended.
While the mixer is running, slowly drizzle in the vegetable oil until fully incorporated.
Once blended, add the red wine vinegar, lemon juice, and diced anchovies. Blend thoroughly.
Add the Parmesan cheese and white pepper to the mixer. Blend until all ingredients are well combined.
The dressing can be stored in the refrigerator for up to one week.
To serve, place the sliced romaine lettuce in a large bowl.
Add 8 ounces of the dressing to the lettuce and toss until all the leaves are thoroughly coated.
Portion the salad onto individual plates.
Sprinkle the salad with Parmesan cheese and top with croutons.
Serve the salad immediately and enjoy!
