Ingredients
3lbsfresh green beanswashed and trimmed
1red pepperdiced into 1/4-inch pieces
1oniondiced into 1/4-inch pieces
2tbspolive oil
4tbspbutter
Instructions
Blanch the green beans: Bring a large saucepan with 3 quarts of water to a boil. Add the green beans and blanch for 2-3 minutes until tender yet crisp. Drain and rinse under cold water for 2 minutes. Set aside.
Sauté the onions and red peppers: Heat a large sauté pan over medium-high heat. Add butter and olive oil to the pan. Add the diced onions and red peppers, sautéing until the onions are translucent.
Add the green beans: Transfer the blanched green beans to the pan and cook until heated through.
