Ingredients
4poundswhole chicken
6stalks celerychopped (4 large, 2 small)
3medium onionschopped (2 large, 1 small)
3clovesgarlichalved
1tablespoonsalt
2bay leaves
2tablespoonsblack peppercorns
1cuplite mayonnaise
Salt and white pepperto taste
Instructions
Place the whole chicken in a large stockpot.
Add the chopped vegetables, garlic, salt, bay leaves, and black peppercorns.
Cover with cold water and bring to a boil.
Reduce heat and simmer for about 30 minutes or until there is no blood visible near the bone.
Remove from heat and let the chicken cool in the water.
Once cooled, remove the chicken from the pot and strain the remaining liquid to use as chicken stock.
Remove the skin and debone the chicken, ensuring to remove any gristle.
Cut the chicken into 1-inch cubes.
In a large mixing bowl, combine the chicken cubes, chopped celery, chopped onions, lite mayonnaise, salt, and white pepper.
Mix well until all the ingredients are evenly coated.
Serve the chicken salad cold with toast or as desired.
