Ingredients
1 ½poundsrusset potatoes — peeled and cubed
4tablespoonsunsalted butter — softened
½cupwhole milk
1teaspooncoarse salt
½teaspoonfreshly ground black pepper
parsley — garnish
Instructions
In a large heavy saucepan, place the cubed potatoes and cover them with cold water by at least 1 inch.
Bring the water to a boil. Then, partially cover the saucepan, reduce the heat to medium, and cook the potatoes until they are tender.
Drain the cooked potatoes and return them to the pot.
Using a hand masher, mash the potatoes until they are smooth.
Add the softened butter to the mashed potatoes and mix thoroughly.
Gradually pour the milk into the mashed potatoes, adding ¼ cup at a time, and mix until the milk is absorbed. Continue adding milk until the desired consistency is reached.
Season the mashed potatoes with coarse salt and freshly ground black pepper, adjusting the amounts to suit your taste.
Garnish the mashed potatoes with chopped parsley and serve them warm.
