Ingredients
1tablespoonolive oil
1tablespoonbutter
1tablespoonginger — minced
1poundcarrot — peeled and sliced on the bias
¼cuporange juice
½teaspoonsalt
¼teaspoonpepper
2tablespoonsmint — chopped
Instructions
Heat a large sauté pan over medium-high heat. Add olive oil and butter, allowing them to melt.
Once the oil and butter are hot, add minced ginger to the pan. Stir for about 30 seconds or until fragrant.
Add sliced carrots to the pan, ensuring they are peeled and sliced on the bias for an appealing presentation.
Sauté the carrots for 7 to 10 minutes, stirring frequently to cook them evenly.
Once the carrots have slightly softened, pour in the orange juice. Continue cooking until the carrots are tender and most of the liquid has evaporated, approximately 5 to 7 minutes more.
Season the carrots with salt and pepper, stirring to combine.
Remove the pan from heat and add the chopped mint. Give the carrots a quick stir to evenly distribute the mint.
Transfer the sautéed carrots with mint to a serving dish and garnish with additional mint leaves, if desired.
