Ingredients
1
pound
tomatillos
husked and rinsed
2
cloves
garlic
1
small white onion
chopped
2-3
green chilies
such as jalapeños or serranos, chopped
1/2
cup
fresh cilantro
chopped
Juice of 2 limes
Salt to taste
Instructions
Place the tomatillos, onion, and chilies in a medium saucepan. Add enough water to cover the ingredients.
Bring to a boil over medium-high heat, then reduce heat and simmer until the tomatillos are soft, about 10 minutes.
Drain and let cool slightly.
Transfer the cooked tomatillos, onion, and chilies to a blender or food processor. Add the cilantro, lime juice, and salt.
Blend until smooth. Taste and adjust seasoning as needed.
Serve immediately or refrigerate for up to 5 days.

Yield: 3 cups
