Ingredients

ripe tomatoes
use fresh or canned, such as San Marzano or fire-roasted
1
small white onion
3
cloves
garlic
peeled
2-3
hot peppers
such as jalapeños or dried chilies like guajillo or arbol
1/2
cup
fresh cilantro
optional
Salt to taste
Juice of 1 lime
optional
Instructions
Preheat your oven to 400°F (200°C). Place the tomatoes, onion, garlic, and hot peppers on a baking sheet.
Roast in the oven for about 20-25 minutes, until the vegetables are soft and slightly charred.
Remove from the oven and let cool slightly.
Transfer the roasted vegetables to a blender or food processor. Add the cilantro (if using), salt, and lime juice.
Blend until smooth. Taste and adjust seasoning as needed.
Serve immediately or refrigerate for up to 5 days.
