Ingredients
1cupbulgur wheat
2cupsboiling water
2large tomatoesfinely chopped
1English cucumberfinely chopped
1bunch fresh parsleyfinely chopped
1/2bunch fresh mint leavesfinely chopped
4green onionsfinely chopped
3tablespoonsextra-virgin olive oil
Juice of 2 lemons
Salt and pepper to taste
Instructions
Place the bulgur wheat in a heatproof bowl and pour the boiling water over it. Cover and let it sit for 20 minutes until tender. Drain excess liquid if needed.
In a large mixing bowl, combine the chopped tomatoes, cucumber, parsley, mint, and green onions.
Fluff the bulgur wheat with a fork and add it to the mixing bowl.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
Pour the dressing over the tabouli mixture and toss well to coat all ingredients evenly.
Let the tabouli sit at room temperature for 30 minutes to allow the flavors to meld together. Alternatively, refrigerate for a few hours.
Before serving, give the tabouli a good stir and adjust the seasoning if needed.
