Ingredients
5large egg yolks
½cupmarsala winecream sherry, or other sweet wine
nonalcoholic sparkling cider can be substituted
6tablespoonssugar
Pinchkosher salt
2cupsassorted fresh berries
mint leaves — for garnish
Instructions
In a stainless-steel bowl, crack the eggs and separate the yolks from the whites. Set the whites aside for future use.
Add the marsala wine to the egg yolks. Place the bowl over a pot filled halfway with water, creating a double boiler. Make sure the water does not touch the bottom of the bowl.
Heat the pot over medium heat, whisking the yolk mixture continuously until it is well combined and has doubled in size.
Blend in the sugar and salt, then increase the speed of the electric mixer or whisk and continue beating for approximately 6 to 8 minutes. The mixture should thicken and form soft peaks.
Remove the bowl from the heat and set it aside. Prepare the fresh berries by washing and drying them.
To serve, place 2 tablespoons of mixed berries into individual goblets or dessert dishes.
Spoon the prepared sauce over the berries, covering them generously.
Serve the Zabaglione with Fresh Berries immediately and garnish with mint leaves, if desired.
