Peanut Oilfor frying
1 ½poundsgreen beanstrimmed
3tablespoonswater
2teaspoonscornstarch
¼cupoyster sauce
¼cupsoy sauce
6clovesgarlicchopped
2tablespoonsgingerminced
2tablespoonssesame oil
2tablespoonssugar
½teaspooncrushed red pepper
1bunch green onionschopped
Instructions
Heat enough peanut oil in a heavy, large pot to reach a depth of 3 inches. Preheat the oil over medium-high heat to 375°F (190°C).
In batches, fry the green beans in the hot oil until they begin to brown in spots, approximately 30 seconds per batch. Use a slotted spoon to transfer the beans to a paper towel-lined plate.
In a small bowl, mix 3 tablespoons of water with the cornstarch. Set aside.
In a heavy, large skillet, whisk together the oyster sauce, soy sauce, chopped garlic, minced ginger, sesame oil, sugar, and crushed red pepper. Place the skillet over medium-high heat and bring the mixture to a simmer.
Whisk in the cornstarch mixture and continue whisking until the sauce boils and begins to thicken, approximately 30 seconds.
Add the fried green beans to the skillet and stir until they are crisp-tender and coated with the sauce, approximately 2 minutes.
Transfer the cooked green beans to a serving platter and sprinkle with chopped green onions.
