Ingredients
4tablespoonsbutter
½cuponion — chopped fine
¼cupcelery — chopped fine
8ouncesChanterelle mushrooms — 1/4″ thick
2cupswild rice
4cupschicken broth
¼teaspoonsalt — to taste
1tablespoonparsley — chopped fine
Instructions
In a medium-sized saucepan, melt the butter over medium heat. Once the butter is bubbling, add the finely chopped onions, celery, and sliced mushrooms. Sauté until the onions turn translucent.
Add the wild rice to the pan and mix well with the sautéed vegetables.
Pour in the chicken broth and add salt to taste. Bring the mixture to a boil.
Reduce the heat to low, cover the saucepan, and let it simmer for 25-30 minutes or until the wild rice is tender and cooked through.
Once the rice is done, garnish the dish with finely chopped parsley.
Serve the wild rice with mushrooms hot as a delightful side dish or a hearty vegetarian main course.
