Ingredients
1 1/2cupsGreek yogurtFull Fat
2tablespoonslemon juice
1 1/2tablespoonsground turmeric
2tablespoonsground cumin
3poundschicken thighs without skin
1/4poundunsalted butter
4teaspoonscanola oil
2eachmedium yellow onions
4clovesgarlic
3tablespoonsfresh ginger
1tablespooncumin seeds
1tablespooneach cinnamon stick
2tablespoonmedium tomatoes -- diced
2tablespooneach Anahiem chiles -- seeded and diced
kosher salt -- to taste
2/3cupchicken stock
1 1/2cupsheavy whipping cream
1 1/2teaspoonstomato paste
3tablespoonsalmonds -- chopped
1/2bunchcilantro
Instructions
In a large bowl, whisk together Greek yogurt, lemon juice, turmeric, and ground cumin. Add the boneless chicken thighs and coat them evenly with the marinade. Cover the bowl and refrigerate for up to a day.
In a large pan over medium heat, melt the unsalted butter with canola oil until it starts to foam. Add the onions and cook, stirring frequently, until they become translucent. Stir in the garlic, ginger, and cumin seeds, and continue cooking until the onions begin to brown.
Add the cinnamon stick, diced tomatoes, Anaheim chiles, and salt to the pan. Cook for about 10 minutes until the chiles become soft.
Add the marinated chicken along with the marinade to the pan. Cook for 5 minutes, then pour in the chicken stock. Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to cook uncovered for approximately 30 minutes.
Stir in the heavy whipping cream and tomato paste. Simmer for an additional 10 to 15 minutes until the chicken is cooked through.
Add the chopped almonds and cook for an additional 5 minutes. Remove from heat and garnish with fresh cilantro leaves.
Serve the delicious Murg Makhani with steamed rice or naan bread for a complete and satisfying meal.
