Apple-Beet Salad: Crisp, Healthy, and Irresistibly Fresh

Hello, fellow food enthusiasts! As a registered dietitian, I’m thrilled to share with you a recipe that’s not only a personal favorite but also a nutritional powerhouse: the Apple & Beet Salad. This dish is more than just a salad; it’s a vibrant story of health, tradition, and taste, wrapped in the comforting embrace of nature’s best produce.

A Personal Connection

I remember the first time I made this salad. It was for a family gathering, and I wanted to introduce something new yet familiar. The blend of apples and beets, with their contrasting flavors and textures, turned out to be an instant hit. It reminded us all of the simple joys of eating fresh, wholesome food. This experience sparked my love for creating recipes that are both healthy and delightful.

The Salad’s History: A Tale of Two Roots

The Apple & Beet Salad is a celebration of two versatile ingredients: apples and beets. Apples, with their origins dating back to Central Asia, have been a symbol of health and vitality throughout history. Beets, on the other hand, were initially cultivated by the Romans and have since been a staple in many cuisines worldwide. Together, they create a culinary masterpiece that’s as rich in history as it is in flavor.

Popular for a Reason

This salad’s popularity stems from its simplicity and the perfect harmony of its ingredients. The sweet and tangy flavors of the apples balance the earthy tones of the beets. Plus, it’s visually stunning – a feast for the eyes and the palate!

Key Ingredients: A Symphony of Flavors

  • Crunchy Vegetables: Fennel, radishes, and carrots add a delightful crunch.

  • lb. mixed crunchy vegetables such as fennel, radishes, and carrots, peeled
  • 2 medium-sized beets peeled and thinly sliced
  • 2 medium apples like Honeycrisp or Granny Smith, thinly sliced
  • 1 cup walnuts toasted and crushed
  • 1/4 cup dried cranberries or cherries
  • 3 Tbsp. fresh lemon juice
  • cup extra-virgin olive oil
  • 2 oz. Parmesan shaved, divided
  • Kosher salt and freshly ground black pepper to taste
  • Optional: a handful of mixed salad greens

  • Prepare the Ingredients: Use a mandoline to thinly slice the vegetables, apples, and beets. Submerge them in ice water in a salad spinner or bowl. Let them crisp up for at least 15 minutes, or up to 6 hours if refrigerated.
  • Create the Dressing: Combine olive oil, lemon juice, salt, and pepper in a small bowl. Whisk well and adjust the seasoning to your liking.
  • Toast the Walnuts: Heat the oven to 325°F (163°C). Spread walnuts on a baking sheet and toast for about 9 minutes until golden. Cool and then crush them.
  • Dry the Ingredients: After chilling, remove any ice from the salad ingredients and drain well. If using a salad spinner, spin to remove excess moisture.
  • Assemble the Salad: In a large bowl, mix the vegetables, apples, beets, walnuts, and dried fruit. Add the dressing and toss to coat everything evenly.
  • Add Cheese and Optional Greens: Stir in half the Parmesan. If desired, fold in salad greens.
  • Final Touches: Serve the salad on a platter or in a bowl. Garnish with the remaining Parmesan and a sprinkle of black pepper.

Enjoy this colorful and crisp salad as a refreshing meal or a side dish to any main course!
