  • 1 cup corn

  • 1/4 cup white wine vinegar

  • 1 lime zest and juice
  • 1 teaspoon kosher salt
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 1/2 teaspoon black pepper
  • 15 oz can blackeye peas drained and rinsed
  • 15 oz can black beans drained and rinsed
  • 2 cloves garlic minced
  • 1 orange bell pepper diced
  • 3 Roma tomatoes diced
  • 1 jalapeno pepper seeded and minced


  • In a large mixing bowl, combine corn, olive oil, sugar, white wine vinegar, chopped cilantro, lime zest and juice, kosher salt, cumin, chili powder, oregano, and black pepper. Mix well.
  • Add blackeye peas, black beans, minced garlic, diced orange bell pepper, diced Roma tomatoes, and minced jalapeno pepper to the bowl. Gently mix to combine all ingredients.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
